You will need a stick blender for this, it just doesn’t work in a blender jug.
5 large fresh basil leaves
1/2 C of greek yogurt
1 wedge of avocado (about 1/8th or 1/4 of the avo)
salt and pepper
In a small, but deep, bowl, place all ingredients. Whiz with a stick blender. This is a creamy, very flavourful dressing to use on all kinds of salads or vegetables. You can also use as a dip with vegetables, or you can thin it a bit with olive oil or lemon juice or milk if you want a thinner dressing.
