1 T coconut oil
1 T flaxseed meal
1 T almond meal
1 tsp baking powder
1 tsp cinnamon
¼ tsp ground ginger
1/8 tsp nutmeg
15 or so frozen blueberries
1/3-1/2 small, ripe banana, cut into pieces, or frozen banana pieces
1 T toasted pecan pieces
additional 1/3 of banana to serve (optional)
butter to serve
Pre-heat the griller/broiler of your oven.
Melt oil in bottom of large-ish mug, about 60 seconds on high in microwave. Add egg and stir to combine, then add remaining dry ingredients and stir again. Add blueberries, banana and pecan pieces and stir through evenly.
Microwave the mug of mixture on high for 2 minutes. Remove from oven and let sit for 30-60 seconds, then turn out onto plate. Slice in half and place halves on foil lined tray under the grill/broiler for about a minute… watch carefully as these will burn very easily, not being made of wheat or similar flour.
Serve with butter on each half and additional fruit if desired.
