1 T coconut oil
1 egg
1 T flaxseed meal
1 T almond meal
1 scant tsp baking powder if using Metric measures*
1 tsp cinnamon
1/8 tsp ground ginger
1 tsp xylitol or equivalent sweetener of choice
1-2 T dried currants
1 T toasted pecan pieces
serve with mandarin or other citrus
Mayvers Super Spread or other favourite nut butter or dairy butter to serve
Pre-heat the griller/broiler of your oven.
1. Melt oil in bottom of large-ish mug, about 60 seconds on high in microwave. Add egg and use a fork to combine, then add remaining dry ingredients and stir again. Add currants and pecan pieces and stir through evenly.
2. Microwave the mug of mixture on high for 2 minutes. Remove from oven and let sit for 30-60 seconds, then turn out onto plate.
3. Slice in half and place halves on foil lined tray under the grill/broiler for about a minute… watch carefully as these will burn very easily, not being made of wheat or similar flour.
4. Serve with butter or nut butter on each half and additional fruit if desired.
(* All other metric measures can remain the same. If using non-metric measures, start with these amounts and adjust to taste from there.)
