There are a few new things in my kitchen this month, and some of them are even edible! First of all, I love pale turquoise, duck egg blue, pale blue, whatever you call it. It looks nice with the red backsplash in my kitchen, but I have loved it long before the red came to the kitchen. Recently, Target has added these simple pieces of turquoise crockery to their shelves. Except for a few serving dishes, I am still using the same, plain, white, inexpensive dishes my Mum bought me 38 years ago, when I moved into my first apartment–on the other side of the world! So I have treated myself to a few new pieces, and to be honest, my heart leaps just a little with happiness every time I use one of these! Their simplicity and colour appeals to my aesthetic. And at $3, $5 and $7 a bowl, the bank account is happy too!
In fact, further investigation reveals, turquoise has been a consistent choice for me for years. I have this mini-dish collection that I use all the time for tea bags, chocolates, spices, sauces or storing half lemons cut side down when I am likely to use them again soon. I have decided, in fact, that I will only collect pale blue or turquoise ones to add in future… that will slow down the acquisitions!!
The edibles that have found their way into my kitchen this month started with this delicious Australian made Champagne Vinegar, made by the same company who makes the equally delicious Merlot vinegar. The names on them are different, presumably for marketing purposes. I bought the Merlot in a winery in South Australia, and the Champagne in the vinegar section at Coles supermarket, but the company tells us they are both their products! I recommend both.
I’m a huge fan of Mayver’s Australian made nut and seed butters and these two jars also found their way into my trolley at Coles!! The cacao one is unsweetened and just a little bitter for my taste but add a few drops of Stevia and it is wonderful as a spread or topping. The coconut one is perfect–also is unsweetened. (the 90% Lindt is used in lieu of 100% unsweetened chocolate which is impossible to get here in Alice at the moment)
The standout purchase of the year, though, has to be this pepper mill. It was $46 AUS but compared to custom made wooden mills, that is cheap. The features we most appreciate with this one are: you can see how many peppercorns are remaining; there is a ring around the middle with which you select the coarseness of the grind you prefer; and finally, it has a small plate that automatically slides across the bottom when you finish grinding that keeps pepper from littering whatever surface it rests upon. Brilliant.
My favourite recipe of the month is this simple Zucchini Bake. It is delicious as an accompaniment or as breakfast, and delicious left over as well.
Zucchini Bake
Makes 4-8 servings
45 minutes to make and bake
(hint: make the night before if you want to bake it for breakfast)
INGREDIENTS
- 3 cups sliced zucchini
- 2 whole large eggs
- 1/2 cup egg whites (3-4 egg whites)
- 3 oz sharp cheddar, grated
- 1 oz mozzarella
- 1/8 tsp garlic powder (or omit all together)
- ½ tsp fresh rosemary
- ½ tsp dried oregano
- 1 tsp fresh chives
- 1 tsp salt & a few cracks of black pepper
DIRECTIONS
- Heat oven to 425
- Thinly slice zucchini and layer in an 8” square pan
- Beat together eggs, egg whites, salt & herbs
- Spread the cheese in an even layer then pour eggs over everything.
- Cover loosely with foil and bake for 25 minutes.
- Uncover and let cook until cheese is browned and bubbly
Have a delicious month!
~Ardys

G’day! I’d like a slice of your zucchini slice please and love your collection of bowls!
Champagne vinegar is one of my faves, but always so difficult to find other than buy online!
Thanks for your kitchen view too!

I love your splashes of turquoise but also those little bowls collected from so many places. ( I might have a few too). The zucchini dish looks good, teh extra egg whites giving it more puff.

I have made the zucchini slice four times, about once a week lately, as it is so versatile. I love my little bowl collection, each reminds me of where I found it, but also they are so useful. Thank you for reading Francesca.

Ardys, I love your red splashback. Those in the colour know say red enhances the appetite, so its a great choice for the kitchen. Your peppermill sounds very nifty indeed.

Yes, I know red is supposed to enhance appetite, but perhaps that was a mistake in my kitchen as we seem to have pretty healthy appetites already!! Thank you for reading and commenting Kirsty.

Your kitchen is very beautiful… that splash back feature really does set off your bowl quite nicely… although I’m glad I don’t have to clean it 🙂 zucchini slice is a staple in my house too! I’m sure we all have our own version that pull out and make when the need arises 🙂 Thanks for sharing! Liz x

You wouldn’t believe how much easier than tiles that glass splash back is to clean. A little glass cleaner and presto–no grout to clean. Thank you for reading Elizabeth.

I love the turquoise Target crockery. Much of the old crockery I love and collect has similar humble beginnings I’m sure. I too love little bowls, and amongst the myriad of colours & shapes have a few in turquoise which add colour & variety to the plain white setting I too have had for many years.
Champagne Vinegar… has got me interested. I’ll keep an eye out for it.
Zucchini Bake is so versatile – which is good as the G.O. won’t eat zucchini so I substitute whatever is on hand – aka Fridge Bake 🙂

I really didn’t think the Champagne vinegar would taste that different, but it does have a distinctive flavour that I really like. Yes, Zucchini bake is very versatile. In fact this is based on one I got from a cousin about 40 years ago!! Hers called for ‘soda crackers’ but since I don’t eat wheat that was problematic. So I sort of recreated it and it has worked well. Thanks for reading EllaDee.

Ardys, I love your collection of bowls – I have a real weakness for them too. Now I’m going to drag out a nice one and give it a place in the fridge so I can store my cut lemons on it, thank you! And can I just say how glorious that first photo is? The red splashback is stunning, and the reflections are so crisp! I don’t think I’ll ever manage to keep a splashback that clean! 😀

Ardys, I am with everyone else, your bowls are lovely. When I buy something, I don’t really need but like it can make very happy. I will look at it and smile and then turn around and look at it again. I am the same with cookbooks. I have so many but still more make their way into my house. I feel so lucky to have them around.

Firstly, LOVE the red back splash, Ardys. What a burst of inviting color that simply begs you to visit. I would want to be in front of that stove happily stirring burbling pots all day long.
Secondly, yum on the vinegars, but mostly the spreads. I don’t think I’ve seen anything quite like that around here just yet, but peanut butter, coconut and chocolate are all flavors that I think belong wonderfully in bed together. Yes. Sinful.
Lastly, I’ve now made a grocery list of everything I’ll need for tomorrow night’s dinner. Cannot wait. It looks wholly devine!

Thank you Shelley. Those spreads are made by an Australian company and they do about 6 or 7 different ones, 5 of which I have tasted and can vouch for. Most of them are unsweetened, a couple have a very small amount of sugar compared to other spreads. I wish you could get them in the USA. Surely there must be someone there doing similar products since the USA is such a big peanut producer. Pop on over and you can try them!!! 🙂

I too like the Mayver’s nut spreads but didn’t really fancy the cacao one that much. I must admit that in recent times I have been eating Dick Smith’s peanut butter 😉
Love your collection of bowls as well. Nice to visit your kitchen. 🙂

I think the problem with the peanut/cacao is that cacao is bitter if it isn’t balanced with something sweet. Peanut butter without sweet, as long as it has a touch of salt is fine, but the cacao without some sweetness adds too much bitterness. As you can tell, I’ve done way too much research into this whole thing…. 🙂 thanks for visiting Suz.

Thank you Laila! I would love to see a photo of your clear backsplash with the large photo sometime in one of your IMK posts, sounds amazing. I know a lot of people have recipes for zucchini bake but most have flour in them and this one doesn’t which makes it more user friendly for me.

Haha, yes I thought I was the only one who noticed the glass was called both things!! I went with the spellchecker which thought backsplash was spelled correctly but splash back had to be two words! Thank you for the compliment on the blog theme. I’ve been very happy with it. Thank you for reading!

That deep red is absolutely glorious Ardys and the pale turquoise does look so lovely against it – those Target items are incredibly well priced – some of them look very Anthropologie (an American brand) which retails for ridiculous prices! The vinegars intrigue me – do you use them for salad dressings? And that pepper mill is fantastic – love the fact that it has an automatic bottom plate to contain the mess! Your Zucchini Bake look absolutely delicious too!
PS I am a bit cross as for some reason, WP has unfollowed you for me so I am re-follwing now…

I have had WP do the same thing to some of the blogs I follow. I asked them one time what they had done but they had no idea!! Yes, I know the Anthropologie brand. Most of their things are not my style, but I do love to look in their shops and did you know that their staff hand makes the store decorations? They arrive in pieces and the staff put them together. Mostly I use the vinegars for salads as their flavours are best appreciated that way. The merlot vinegar is very nice with a blood orange infused olive oil when I serve bread and dukkha sometimes, too. Thank you for reading Selma.
