Mug Muffin (grain free)

Ingredients

(recipe uses metric measures so you may need to add slightly more ingredients if you use US measuring but still use 1 large egg)

Garnish with strawberry and serve with yogurt/cottage cheese

2 Tblsp ground flax (I used organic golden flaxseed meal)

1 tsp baking powder

2 tsp cinnamon**

1 tsp coconut oil

2 tsp xylitol (or 1 sachet Stevia)

1 large egg

2 T dried currants

Directions

Mix first six ingredients together in a mug using a fork. Add in the currants and stir through.  Microwave on high for 60 seconds. Allow to cool for a minute then turn out of the mug, slice into four rounds and butter OR have a mixture of cottage cheese and plain Greek yogurt along with it instead of cream cheese.

This is deceptively filling and very tasty.  While it seems high in calories I am never hungry before lunch time, it carries me through at least 4 or 5 hours, believe it or not.

**Or substitute spices that will taste more like hot cross buns… use 1 ¼ tsp cinnamon and ¼ tsp mixed spice along with 1/2 tsp zest from an orange or lemon
