Mixed lettuce leaves

Baby spinach leaves

120g shaved or sliced Deli turkey breast, or roast chicken pieces**

20g good cheddar cheese**

red or yellow capsicum (bell pepper)

fresh tomato

Lebanese cucumber

Salt & pepper

Olive oil and white wine or cider vinegar

This recipe is for one serving ~25g protein per serving

Combine vegetable quantities to your own taste, these are just what we like.  Drizzle with olive oil and vinegar, not too much as the vegetables combined with the cheese and turkey/chicken give a lovely flavour all their own. Season with salt and pepper, again, go easily at first until you find what you like.

The above is one serving.  It is a large salad but it doesn’t make me feel over-full and it stays with me for 4 or 5 hours at least.

**Substitute ham and swiss cheese or jarlsberg cheese for a different set of flavours.
