Carrot Cake Style Bites

These are made with raw carrot and there is NO baking involved. They taste like carrot cake but are totally healthy, no eggs, flour, dairy or sugar. They are a total invention by me, so blame me if you hate them, likewise, let me know if you like them!! xxIMG_8989 (2)

Yield: 8-9 walnut size bites, approx 3 servings

Main mixture

75g finely grated carrot–reserve any juice that is a result of the grating (I use a microplane grater for this step, but any fine grater will do)

35-40g dates, finely diced

1/2 tsp cinnamon

1/4 tsp good vanilla extract

7g coconut flour

20g hazelnut meal or almond meal

15g dried currants, chopped

8g shredded, unsweetened coconut

18g pecan nuts finely chopped

Topping

10g each, desiccated coconut, almond or hazelnut meal, coconut sugar (if you have a strong sweet tooth, add 15g of coconut sugar instead of 10 🙂

After grating the carrot and chopping the dates, add both plus any juice to a food processor or the small bowl of a stick blender (preferable due to the small amounts) along with the remaining ingredients. If you like a slightly more textured bite, leave out the pecans and stir them in at the end so they remain in slightly larger pieces. Blend until all is blended and is the consistency of wet sand when pinched together between your fingers. Stir in the pecans now so that they add some nice texture to the bites, if you didn’t add them to the processor bowl. (Either way is fine, I’m just being pedantic!)

Stir together the topping mixture in a small bowl.

Roll carrot mixture one at a time into walnut sized balls and roll in the topping mixture. You should end up with 8 or 9 bites. Put them into a covered dish in the fridge for half an hour or so to ‘set’.

Bites will keep for 48 hours in the fridge, if they last that long!!
